Ingredients
10 oz premium white chocolate, finely chopped
1/2 cup heavy cream
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract
1/2 cup finely chopped pistachios, plus extra for coating
Pinch of salt
Instructions
1. Place chopped white chocolate in a heatproof bowl.
2. Heat heavy cream and butter in a saucepan over medium-low heat until just simmering.
3. Pour hot cream mixture over chocolate and let sit 5 minutes to melt.
4. Stir gently until smooth and glossy, creating a ganache.
5. Add vanilla extract, chopped pistachios, and salt; mix until evenly combined.
6. Cover the ganache with plastic wrap pressed to the surface and refrigerate 2–3 hours.
7. Once firm, scoop small portions and roll into balls between your palms.
8. Roll truffles in extra chopped pistachios until fully coated.
9. Place coated truffles on parchment paper and refrigerate 30 minutes to set.
10. Serve chilled or at room temperature for best texture.
