Ingredients
1 1/2 cups (9 oz) high-quality chocolate chips or finely chopped chocolate
1/2 cup heavy cream
1–2 tablespoons powdered sugar (optional)
1 teaspoon vanilla extract
Pinch of sea salt
Cocoa powder
Shredded coconut
Chopped nuts
Sprinkles
Melted chocolate
Powdered sugar
Instructions
1. Place chopped chocolate or chocolate chips in a dry, heatproof bowl.
2. In a small saucepan, heat heavy cream over medium heat until it begins to simmer.
3. Pour the hot cream over the chocolate and let sit 2–3 minutes.
4. Gently stir until the mixture is smooth and glossy.
5. Add vanilla extract, powdered sugar if using, and a pinch of sea salt. Mix well.
6. Cover the bowl with plastic wrap pressed against the surface and refrigerate 2–3 hours or until firm.
7. Scoop and roll the chilled ganache into small balls.
8. Roll each truffle in your choice of coating: cocoa powder, nuts, coconut, or powdered sugar.
9. Chill again for 15–30 minutes to set before serving.
Notes
Add liqueur such as Kahlúa or Grand Marnier for a boozy version.
Mix in orange zest or chili powder for a fun flavor twist.
Use white chocolate for a sweeter variation.
Store in an airtight container in the refrigerator for up to one week.
