Description
Decadent homemade hazelnut chocolate truffles made with creamy ganache, roasted hazelnuts, and rich dark chocolate — the perfect bite of indulgence for any occasion.
Ingredients
8 oz high-quality dark chocolate (60-70% cacao)
1/2 cup heavy cream
2 tablespoons unsalted butter
1 teaspoon vanilla extract
Pinch of sea salt
1/2 cup finely ground roasted hazelnuts
Chopped hazelnuts, cocoa powder, or powdered sugar for coating
Instructions
1. Chop the dark chocolate finely and place in a heatproof bowl.
2. In a saucepan, gently heat the cream and butter until just simmering around the edges.
3. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes.
4. Whisk gently until smooth and glossy, then stir in vanilla and sea salt.
5. Fold in the finely ground hazelnuts.
6. Cover and refrigerate the ganache for 2–4 hours until firm enough to roll.
7. Scoop and roll the ganache into small truffle-sized balls.
8. Roll each truffle in chopped hazelnuts, cocoa powder, or powdered sugar.
9. Place on a parchment-lined tray and refrigerate until firm.
Notes
Add a pinch of cayenne or espresso powder for a flavor twist.
Mix in a splash of Frangelico or Kahlúa for a boozy version.
Fold in citrus zest for brightness.
Store in an airtight container in the fridge for up to one week.
