Description
Healthy, no-bake date cacao truffles made with Medjool dates, cacao powder, and nut butter — rich, chocolatey, and naturally sweet snack bites.
Ingredients
1 1/2 cups Medjool dates, pitted
1/4 cup unsweetened cacao powder
2 tablespoons nut butter (almond, peanut, or cashew)
1 teaspoon vanilla extract
Pinch of sea salt
Optional: shredded coconut, chopped nuts, or cacao powder for rolling
Instructions
1. If dates are firm, soak in warm water for 10 minutes, then drain well.
2. Place dates, cacao powder, nut butter, vanilla, and salt in a food processor.
3. Blend on high until the mixture forms a sticky dough, scraping down sides as needed.
4. If too dry, add a small spoon of nut butter or a splash of water; if too sticky, add cacao powder.
5. Scoop out tablespoon-sized portions and roll into balls between your palms.
6. Coat each truffle in cacao powder, shredded coconut, or chopped nuts if desired.
7. Place truffles on parchment and refrigerate 30 minutes to firm up.
8. Store in an airtight container in the fridge for up to 2 weeks.
Notes
Use soft Medjool dates for best texture.
Add cinnamon, cardamom, or cayenne for extra flavor.
Mix in orange zest or peppermint extract for variation.
