Rich, nutty, and decadent, these dark chocolate almond truffles combine silky dark chocolate ganache with the crunch and aroma of roasted almonds for an irresistible homemade treat.
Ingredients
8 oz dark chocolate (60–70% cocoa solids)
1/2 cup heavy cream
2 tablespoons unsalted butter
1/2 teaspoon almond extract (optional)
1/4 teaspoon sea salt
1/2 cup finely chopped roasted almonds (plus extra for coating)
Cocoa powder
Powdered sugar
Instructions
1. Finely chop the dark chocolate and place it in a heatproof bowl.
2. In a small saucepan, heat heavy cream and butter over medium heat until it just begins to simmer.
3. Pour the hot cream mixture over the chocolate and let sit for 2–3 minutes.
4. Whisk gently from the center outward until smooth and glossy.
5. Stir in almond extract and sea salt, then mix in chopped almonds if desired.
6. Cover and refrigerate the ganache for 2–3 hours until firm enough to roll.
7. Scoop small portions and roll between your palms to form balls.
8. Roll each truffle in your choice of coating: chopped almonds, cocoa powder, or powdered sugar.
9. Place on a parchment-lined tray and chill until set.
Notes
Add orange zest, espresso powder, or a splash of Amaretto for flavor variations.
Infuse the cream with cinnamon or cardamom for a spiced twist.
Store truffles in an airtight container in the refrigerator for up to 1 week.
For a salted version, sprinkle flaky sea salt over the top before serving.
